www.tgs.com/products/avizo.asp) seem like they have it all.
Other than that, why don't you ask some doctors and see what they
would like to have?  However, many systems that physicians use that
generate 3D images (CT, MRI, etc.) already have built-in visualization
capabilities.
I'm sure you already know the BASIC features such as load image,
orient/rotate, zoom, cut-away views, slice view, volume visualization,
thresholding, surface rendering, segmentation and pseudo-coloring,
etc.  See the web sites I listed for lots more features.
