Displaying a PDF with varying choices of layers?

Objective:  

*  Create, using Illustrator and Acrobat 7, a PDF with a 
   fixed background plus multiple added layers.

*  Display this PDF as N successive slides in a full-screen 
   presentation, with each sequential slide adding (and 
   sometimes also subtracting), under presenter control, 
   one or more of these added layers.

*  Both steps on Mac OS 10.3.9.

I'm sure I can figure this out for myself (I understand layers, and to a 
lesser extent actions), but I'll appreciate any more specific guidance I 
can get as to just how to approach this in the simplest fa****on.

(Other than just creating N successive slides, each with a certain 
desired set of layers on it, which is what I'm doing now.)

If I make certain layers visible, others invisible in an Illustrator 
image, then Save As a Copy to PDF format, do all the invisible (and in 
my case unwanted) layers get transferred into that PDF?

Thanks for any pointers.
