Gnuplot doesn't know anything about fonts.  It just takes the
font name you gave it, and p***** it on to the external processing
library or device.   Your *.eps file says in it "use font BlaBlaBla".
Some printers may have that font, other printers may not have it.
All PostScript devices are supposed to have Helvetica and Times.
So you are usually safe if you request one of those two fonts.
But that's PostScript.  For PDF, it's more complicated and I can't
help that much.
