Thanks again for taking the time Ethan. Given your comments I have
taken LaTeX out of the equation, so to speak, and am just looking at
the eps that is produced. I seem to have found an odd solution. If I
run my plot script with the following terminal settings

set terminal epslatex color
set output "newtest4.tex"
(leads to problematic eps as described above)

and then comment these out and run with the following terminal
settings

set terminal postscript eps enhanced
set output "enhanced.eps"

the eps (in this case newtest4.eps) is written to again and appears
totally correct (minus labels etc that TeX can fill in), just the same
as the png output! I of course also get enhanced.eps (with labels etc
in the eps), but that is not needed.

This is very weird and I don't understand it at all!
