Exactly.
The GEGL functions can be enabled, and apparently the
major effect is that all color operations will be done
with 32 bit floating point. That *could* be
accomplished on a 16-bit depth image, but GIMP can still
only load and process 8-bit depth images at this point.
I assume that means the internal image format itself, and
the XCF file format, all have to be upgraded to handle
other than 8-bit depth images.
As for stability, the 2.5 releases were in fact very
stable, but I'm not so sure about 2.6! There was a
veritable whirlwind of activity immediately prior to the
release of 2.6.0, and a lot of bug fixing was added that
had not been in the last 2.5 release. (I was watching
the SVN ChangeLog, hoping to see 16-bit depth being
added, and was very surprised when instead they bumped
it up to 2.6.0 the day before it was released.)
And I've actually managed to get a segmentation fault
out of 2.6.0 one time already, something I haven't seen
from GIMP for years, even using the 2.3 and 2.5
development threads.
If absolute stability were a concern, I think waiting for
at least 1 or 2 release updates would be in order.

Well, it isn't hard to build for those who do build.
But many do not, and should not be expected to. But
they simply have to wait until someone else does, and
packages it for their distribution.
Of course for those who have never been into building
packages and want to learn... GIMP is probably a good
package to learn with!
