Use the Path tool to outline the coin, then go to the
Select menu and first make a selection from the Path,
then invert the selection.  Then use the Bucket Fill to
fill the entire selection with the color of your choice.

The trick is that when using the Path tool, do it zoomed
in to magnify the image (use the '+' key to zoom in, and
then use the sliders to position the ****tion of the
image you want to work on).  You want it magnified to
the point where you can literally see, along the edge of
the coin, each individual square pixel.

You will notice that an "edge", for example between the
coin and the background, is never actually just a
transition of pixels from one color next to pixels of a
different color, but is rather a transition with about 4
to 6 pixels of intermediate colors between the one color
and the next color.  What you want to do is zoom in
close enough that you can literaly mark the Path with
points on the outer edge of that transition (or two
pixels in if you like...  try a few variations and see
which one looks the best).
