Gimp is NOT a word processor.  Though it doesn't do what a word processor
does it does allow you to use an italic font.  Just choose a font that has
the word 'italic' in its' description and guess what ?  You get italic
letters......  So for instance choosing 'URW Palladio L Bold Italic' gives
italicized letters....


You CAN use the 'text editor' window that pops up when you choose the text
tool to 'open' a text file which can have italicized letters already. 
Underlined or color text doesn't seem to be sup****ted.

Also, and here's the good part, there is one better option at least in my
humble opinion.  Use Inkscape to produce text !!  You can use whatever
font
is available and you can click the italicize button as well as bold.  You
can even use color.  Then save as a 'plain svg' file and open it with Gimp
as you would with any image file Gimp recognizes.  Im****t and merge paths
in the open dialog that pops up.  Voila'  Colored, bold, italicized text
that looks very clean !!
