It's probably the preview format that's causing the display problem.
Regardless of whether or not they show in a preview, though, EPSFs of
all kinds ought to print correctly on any PostScript device.
Other than that, it's hard to be more specific; it seems likely that the
problem is arising in Photoshop. What platform are you on (Mac or
Windows)? Did you choose DCS2 as the format to save in? (DCS1 can't
handle spot colours.) What options did you choose in Photoshop's
save-as-DCS2 dialog?
